Avocado Cucumber Salad is a family favorite side dish. Loaded with avocado, cucumbers, tomatoes, and spring onions tossed in a zesty Italian dressing. This side dish recipe has been the hit of the party and Thanksgiving for years.

Allergy Friendly Dairy Free Salad

Anytime we have a party or I go to a potluck this is the dish I bring. It’s gluten free, dairy free, vegan, and vegetarian friendly. Depending on the dressing egg free too. At potlucks I always find lots of dishes people that have allergies cannot eat. This one seems to be the dish that in the past made those people happy.

When I say this is a family favorite it really is. We make this every single Thanksgiving. It’s one of the three side dish recipes we make for the holidays. It’s super simple, fresh, and healthy side dish.

As a family we have mashed potatoes and gravy, avocado cucumber salad, and duck for Thanksgiving. We used to do turkey but as we have less people around for the holiday’s; duck fits us well. We make a bohemian duck that this cucumber salad pairs perfectly with.

I like simple salads to use as a weeknight side dish. This avocado salad is one of those easy weeknight side dishes. Not everything has to be cooked or warm to be a great side dish. The dressing in this recipe can easily be changed out. too.

The Dressing

We use zesty Italian dressing. However, other dressings like vinegar and oil or parmesan vinaigrette dressings also pair well with this salad. I find creamy dressings over ride the flavors of the cucumbers, tomatoes, and avocado.

Stick to the light dressings if you want the flavors to pull through. I also like to add cracked black pepper but this is totally optional. I like the little extra kick it gives to the salad. Don’t add salt as the dressing usually has enough salt on their own.

This is not a dish to make in advance as the avocado will turn black and everything else will get mushy sitting in the dressing. Although, cutting the the cucumber, tomato, and spring onions is fine but don’t add the dressing. Keep in the fridge and add dressing and avocado when your ready to serve.

Avocado Cucumber Salad

Ingredients
  

  • 2 bundles Spring onions; diced
  • 4 roma tomatoes; diced
  • 2 cucumbers; quartered and diced
  • 2 avocados; diced
  • 1 1/3 cup Italian dressing
  • 1/4 teaspoon cracked black pepper

Instructions
 

  • Diced tomatoes and spring onions. Cut cucumbers lengthwise and then diced. Add to bowl. 
  • Cut avocado and place into bowl. 
  • Top with dressing. Put a little at a time until there is just enough to cover. 
  • Top off with black pepper.
