Ever feel like having a big mac but don’t feel like running to get one. If so, then this salad is perfect for you. With ground beef, pickles, onions, and thousand island dressing a big mac salad is super easy to make at home.

When it comes to making salad at home for dinner different creations can really change up dinner. The pickles I use on this salad are bought at central market. The angry pickles which are off the olive bar there. Any pickle can be used essentially but these are just what we prefer.

Roma tomatoes sliced up or cherry tomatoes diced in half work on this salad. While the original big mac doesn’t have red onions these are what we prefer. If you’d like white onions then use those just as well.

The ground beef is a 90/10 and is cooked up with minimal spices that are usually in the fridge and pantry. Garlic and paprika along with salt and pepper make this a simple ground beef weeknight dinner.

The tomatoes are diced up chunky. However you can dice the tomatoes for the dinner salad as small or large as you like. Other great tomatoes to use are cherry or grape tomatoes. But we just used roma tomatoes as they are one of my favorite tomatoes.

About The Pickles:

These are the pickles for the salad that is mentioned above. We like a pickle that’s not so sweet and not so sour. These have a little spice to them. However, dill pickles or even bread and butter pickles could be used.

What we love most about this salad is that it allows for a simple weeknight dinner. Ground beef weeknight dinners are always the best. Easy to cook and just cut up the rest of the toppings. Here we used onion, tomatoes, pickles, and topped with ground beef and thousand island dressing.

Ingredients
  

  • 1 lb ground beef; 90/10
  • 1 tablespoon olive oil
  • 1 tablespoon garlic; minced
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 head of iceberg lettuce
  • 2 roma tomatoes; diced
  • 12 pickles; diced
  • 1/2 cup red onion; diced
  • 1 bottle thousand island dressing

Instructions
 

  • Place ground beef and olive oil into a saute pan. Add salt, pepper, paprika, and garlic. Cook until meat it browned. Drain grease.
  • Wash and chop iceberg lettuce. Place into a large bowl. Dice the tomatoes. Add to the bowl and toss.
  • Dice the pickles. Slice pickles can be diced. Look for pickles that have a thicker slice. Add to bowl. Chop the red onion and add to bowl.
  • Add ground beef to the bowl and toss with salad tongs. Serve topped with thousand island dressing.
