Sundried Tomato Pancetta Pasta
Second to a good carbonara with pancetta is a sundried tomato based pasta. Sundried tomato pancetta pasta is a fantastic rustic pasta recipe. Pancetta is fried up then pasta is tossed in pancetta and then sundried pesto. Topped off with fresh basil and served with a rustic bread.

Pesto pasta recipes are a great go to meal. 20 minutes meals are great for the weeknights after you’ve worked long hours and don’t want to mess around in the kitchen for long periods of time. Comfort food at its simplest measure.

Flavor Tip:
Be sure to cook the pasta at the same time as cooking the pancetta. I do this in my bialetti pasta pot. The pasta will be drained then added to the pan with the pancetta. Therefore, the pasta will take on the flavor of the pancetta. This is before adding in the sundried tomato pesto.

Coming from a long line of Italian’s I love how the pancetta enhances the flavor of the pasta. After, add the sundried tomato pesto to the pasta. Toss it well. I used parmesan on the pasta as an additive topping. Additionally, I use jarred pesto sometime and other times I make my own with olive oil, sundried tomatoes, pine nuts, and garlic.

However, for ease jarred pesto is just fine with this dish. To add color and a bit of flavor to the dish top off with basil and some rustic bread on the side. There is nothing low carb about this meal that’s for sure! Just cuddle up with a big plate and good movie.

Pasta meals are not always my go to meal but I do make them for a simple dinner they must be savory. Sundried Tomato Pancetta Pasta and Spaghetti Carbonara are my two go to pasta meals.

Sundried Tomato Pancetta Pasta
Pasta tossed in sundried tomato pesto and pancetta.
Ingredients
- 1 jar of sundried tomato pesto (or homemade pesto of choice)
- 1 lb package thin spaghetti noodles
- 1/2 lb pancetta
- 1 tablespoon olive oil
- 1/2 cup parmesan cheese
- fresh basil for garnish

Instructions
- Boil pasta as directed on the package. Drain.
- Be sure to boil pasta while cooking the pancetta.
- In a deep saute pan, add in olive oil and pancetta. Fry pancetta till crispy. Add pasta to the pancetta and toss well. This coats the pasta allowing the smoky flavors to sink into the pasta.
- Stir in pesto and toss well. Serve topped with basil and parmesan.
