We get so busy that we end up eating out so often. It’s so hard to find healthy food on the menu at many places here. That’s why I bought some Greek chicken cucumber salad meal prep would be easy! Meal prep containers to help me have easy lunches at work (home studio) and easy dinners. Dinner that my family can pull from the fridge or freezer and microwave if needed.

The idea is to prep everything on your free day say like a Sunday. Pick a few meals and make them for the week. These will help fill gaps when you don’t have time to cook but really don’t want to go out to eat. This Greek Chicken Cucumber Salad meal prep is perfect for a fridge meal.

I bought some containers from amazon that I though would do the trick for easy storage along with cooking cleaning, and more. These are dishwasher safe, microwave safe, and freezer safe along with BPA free. They are called freshable. So far we love them! If one of us eats at a different time I can also pop a meal into these for when they get home.

Greek Chicken with Cucumber Salad and Tzatziki Sauce

Yield: 4 Servings
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Ingredients

  • Greek Chicken
  • 3 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons garlic, minced
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • Cucumber Salad
  • 2 cucumbers; sliced
  • 2 vine ripe tomatoes; quartered
  • 3 slices of onion; chopped in halves
  • 3 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 1/3 tablespoon garlic; minced
  • 1/2 teaspoon dried oregano
  • 1 tablespoon fresh mint leaves; chopped
  • Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 1/2 tablespoon fresh mint
  • 3 tablespoons lemon juice
  • 1 teaspoon dill weed
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

For Chicken:

In a skillet, add olive oil and bring to medium heat. Add chicken. Top with vinegar, lemon juice, garlic, and spices. Flip chicken and repeat. Cook until chicken is done and golden on top.

For Cucumber Salad:

Cut tomatoes into quarters. Cut cucumbers into wedges. Slice red onion into rounds and then place all three in a bowl. In a bowl, whisk together the lemon juice, vinegar, olive oil, and spices. Pour over salad and toss.

For Tzatziki Sauce:

In a bowl, add in greek yogurt with lemon juice and spices. Whisk well! Serve on the side with the chicken and cucumber salad for dipping sauce.
