- 2 cups Pancake Mix
- 1 1/3 cups milk
- 2 eggs
- 1 cup fresh blueberries; rinsed
- 1 cup syrup
- 4 tablespoons powdered sugar
- Preheat oven to 350 degrees F. Place mini liners into your mini muffin pan. If you don't have liners then lightly grease the muffin pan.
- In a medium bowl, whisk together, milk, eggs, and pancake mix. Stir in the blueberries.
- Place about three tablespoons of batter into each muffin slot.
- Bake for 12 to 14 minutes until lightly browned on top. Let cool 3 to 5 minutes and then top with powdered sugar and dip into syrup.
